INGREDIENTS
Burger
2 lbs. grassfed beef
1 tbsp salt
3 chipotle peppers in adobo sauce, diced
1 egg
Avocado slices
Combine beef, salt and chipotle peppers and form into 6-8 patties (depending on how big you like your burgers). Refrigerate until ready to grill.
Cilantro Chimichurri Sauce
1 jalapeno
½ of a large red onion
4 cloves of garlic
1 bunch of cilantro
1 bunch of parsley
juice of one lime
½ cup olive oil
1 tsp salt
Combine everything but salt and olive oil in food processor. Pulse until blended, add olive oil and salt. Blend until the mixture is smooth but not completely blended together. Refrigerate. These flavors will become stronger the longer it sits.
Bacon Mashed Sweet Potatoes
1 12oz bag of frozen sweet potato (ALDI’s has bags of diced sweet potato that you can steam in the bag…brilliant and only $2!!!)
6 slices of bacon, cooked and chopped
4 tbsp of butter or ghee
Throw your sweet potatoes in the microwave while you begin to cook your burger to your liking. Fry your egg to your liking as well while your burger cooks. Mix your sweet potato, bacon and butter/ghee together and serve on a plate. Top with your burger, egg, chimichurri sauce and sliced avocado….YUM!!
